Brioche Bun Preparation

    Making the Dough

    In a large mixing bowl, combine the warm milk, sugar, and yeast. Let it sit for about 5-10 minutes, until foamy. Add the flour, salt, eggs, and softened butter. Mix until a dough forms.

    Kneading the Dough

    Transfer the dough to a floured surface and knead for about 7-10 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise for about 1-2 hours or until doubled in size.

    Shaping the Buns

    Once risen, punch down the dough and divide it into 8 equal pieces. Shape each piece into a ball and flatten slightly. Place them on a baking sheet lined with parchment paper. Cover and let rise for another 30-45 minutes.

    Baking the Buns

    Preheat the oven to 375°F (190°C). Brush the tops of the buns with egg wash. Bake for 15-20 minutes or until golden brown. Remove from the oven and let cool.

Burger Assembly

    Cooking the Bacon

    In a skillet over medium heat, cook the smoked bacon until crispy. Remove from the skillet and place on paper towels to drain excess fat.

    Forming the Patties

    In a mixing bowl, gently season the ground beef with salt and pepper. Form into 4 equal-sized patties, making a slight indentation in the center of each.

    Grilling the Patties

    Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on one side. Flip and place a slice of New School American cheese on top of each patty. Cook for another 3-4 minutes for medium doneness.

    Building the Burger

    On the bottom half of the brioche bun, layer the lettuce, tomato slices, burger patty with cheese, crispy bacon, pickled beets, and a dollop of spicy mayo. Top with the other half of the bun.

    Serving

    Serve immediately with your favorite side, such as fries or a salad.
