Method

Preparing Potatoes

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Wash and Cut Potatoes

Wash the fingerling potatoes under cold water. Cut them in half lengthwise to expose the interior.

  3. 3

    Season the Potatoes

In a large bowl, toss the halved potatoes with olive oil, salt, and black pepper until well coated.

  4. 4

    Bake the Potatoes

Spread the seasoned potatoes in a single layer on a baking sheet. Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy, flipping halfway through.

Making Garlic Aioli

  1. 5

    Prepare Garlic

Peel and finely mince the garlic cloves.

  2. 6

    Mix Aioli Ingredients

In a medium bowl, combine mayonnaise, minced garlic, lemon juice, salt, and black pepper. Whisk together until smooth and creamy.

  3. 7

    Taste and Adjust

Taste the aioli and adjust seasoning if necessary, adding more salt or lemon juice to your preference.

Serving

  1. 8

    Plate the Dish

Once the potatoes are crispy, remove them from the oven and let them cool for a few minutes.

  2. 9

    Garnish and Serve

Sprinkle chopped chives over the crispy potatoes and serve with the garlic aioli on the side for dipping.
