Prepare Cranberry Mixture
In a small saucepan, combine fresh cranberries with 1/4 cup of water and 1/4 cup of sugar to create a cranberry syrup. Bring to a boil over medium heat. Once boiling, reduce heat and let simmer until the cranberries have burst and the mixture has thickened slightly, about 10-15 minutes. Remove from heat and let cool.

Mix the Cocktail
In a cocktail shaker, combine 2 oz of Aperol, 1 oz of the cooled cranberry syrup, 1 tsp of fall spices, and ice cubes. Shake well to combine and chill the mixture.

Strain and Serve
Strain the mixture into a chilled glass filled with ice. Top with 4 oz of Perrier-Jouët Champagne, stirring gently to combine.

Garnish
Garnish the drink with a few whole cranberries and a sprinkle of additional fall spices on top for an aromatic finish.
