Preparing the Chicken

Preheat your grill or pan over medium heat. Season the organic chicken breasts with olive oil, salt, and black pepper on both sides. Grill or cook in the pan for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest for 5 minutes before slicing.

Prepare the Croutons
Preheat your oven to 375°F (190°C). Cut the sourdough bread into cubes. In a bowl, toss the bread cubes with olive oil, garlic powder, and salt. Spread the cubes on a baking sheet and bake for 10-15 minutes, until golden brown and crispy.

Assemble the Salad
In a large bowl, tear the little gem lettuce and kale into bite-sized pieces. Add the sliced chicken, croutons, and grated Parmesan cheese.

In a mixing bowl, combine the grated Parmesan cheese, lemon juice, Dijon mustard, minced garlic, and olive oil. Whisk until smooth. Taste and adjust seasoning with salt and black pepper as needed.
