    Prepare the Pancetta

    In a skillet over medium heat, add the slices of pancetta. Cook for about 3-4 minutes on each side until crispy. Remove from the skillet and let drain on paper towels.

    Fry the Egg

    In the same skillet, lower the heat to medium-low. Add the butter and let it melt. Crack the egg into the skillet and cook for about 2-3 minutes until the whites are set but the yolk is still runny. Season with a pinch of salt and black pepper if desired.

Assembling the Sandwich

    Toast the Brioche

    While the egg is frying, toast the brioche slices in a toaster or on a separate skillet until golden brown.

    Layer the Sandwich

    On one slice of toasted brioche, layer 2 slices of crispy pancetta, followed by a slice of provolone cheese. Spoon the salsa pepperoncini over the cheese.

    Add the Fried Egg

    Carefully place the fried egg on top of the salsa pepperoncini. Place the second slice of toasted brioche on top to finish the sandwich.
