    Prep the Vegetables

    Drain and rinse the artichoke hearts if using canned, or thaw if using frozen. Chop them into smaller pieces. Rinse the spinach thoroughly and roughly chop. Finely chop the onion and mince the garlic.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for an additional minute until fragrant. Stir in the artichoke hearts and spinach, cooking until the spinach wilts, about 3 minutes. Season with salt and black pepper.

    In a large bowl, whisk together the eggs and milk until well combined. Add the crumbled feta cheese and mix gently.

    Combine and Cook

    Pour the egg mixture over the sautéed vegetables in the skillet. Gently stir to combine. Cook on medium-low heat without stirring for about 8-10 minutes, until the edges begin to set.

    Finish the Frittata

    Preheat your oven broiler. Once the edges are set, transfer the skillet to the broiler and cook for an additional 3-5 minutes, or until the top is set and lightly golden. Keep an eye on it to prevent burning.
