Prepare mint-ginger infusion (syrup)
In a light saucepan, combine granulated sugar and 1 cup water. Bring to a gentle simmer over medium heat, whisking until the sugar dissolves completely. Remove from heat, add 1 cup mint leaves (loosely packed) and 2 tablespoons grated fresh ginger. Cover and let steep for 15 minutes to extract flavor. Strain through a fine-mesh sieve to remove solids, then stir in 2 tablespoons fresh lemon juice. Let the syrup cool completely, then refrigerate until cold.
Chill and prepare serving glasses
While the syrup cools, place four tall glasses in reach. If desired, rub a mint leaf along the rim for aroma.
Assemble each mint-ginger cooler
For each glass, add 2 tablespoons of the mint-ginger syrup. Fill with ice cubes to the rim, then top with 1 cup sparkling water. Stir gently to blend flavors, adjusting sweetness with more syrup if preferred.
