    Peel and Cut Potatoes

    Peel the russet potatoes and cut them into even strips about 1/4 inch thick to ensure even cooking.

    Soak Potatoes

    Place the cut potato strips in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and makes the fries crispier.

Cooking

    Heat Oil

    In a large, heavy pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.

    Dry Potatoes

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel to remove excess moisture.

    Fry Potatoes (First Batch)

    Carefully add a handful of potato strips to the hot oil, making sure not to overcrowd the pot. Fry for about 5-6 minutes until they are pale and soft but not browned. Remove with a slotted spoon and drain on paper towels.

    Fry Potatoes (Second Batch)

    Increase the oil temperature to 375°F (190°C). Add the partially cooked fries back to the oil in batches and fry for another 3-4 minutes until they are golden brown and crispy. Remove and drain on paper towels.

    While the fries are still hot, sprinkle them with salt, paprika, and garlic powder to taste. Toss gently to coat.
