Preparation
Wash and Cut Potatoes
Thoroughly wash the russet potatoes under cold water to remove any dirt. Cut each potato into even sticks about 1/4 inch thick.
Soak Potatoes
Place the cut potato sticks in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch for crispier fries.
Cooking
Heat Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure accurate temperature.
Dry Potatoes
After soaking, drain the potatoes and pat them dry with a clean towel to remove excess moisture.
Fry Potatoes
Carefully add a handful of dried potato sticks to the hot oil, being careful not to overcrowd the pot. Fry for about 5-7 minutes or until golden brown.
Remove and Drain
Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil.
Season Fries
While the fries are still hot, sprinkle them with salt and black pepper to taste.
