Method

Prepare the Hollandaise Sauce

    Melt the Butter

    In a saucepan over low heat, melt the stick of unsalted butter until it is completely liquid. Remove from heat and set aside.

    Whisk the Egg Yolks

    In a mixing bowl, whisk together the egg yolks and lemon juice until the mixture is pale and thick.

    Combine and Whisk

    Slowly drizzle the melted butter into the egg yolk mixture while continuously whisking until the sauce is smooth and thickened. Add a pinch of salt and a dash of cayenne pepper for flavor. Keep warm.

Prepare the Eggs and Ham

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide them into the simmering water. Poach for about 3-4 minutes or until the whites are set but the yolks remain runny. Remove with a slotted spoon and set aside.

    In a skillet over medium heat, place the ham slices and grill for about 2-3 minutes on each side until they are heated through and slightly crispy. Remove from the skillet.
