Method

Pancakes

  1. 1

    Prepare the Batter

In a large mixing bowl, combine the all-purpose flour, baking powder, sugar, and salt. Whisk together until well mixed.

  2. 2

    Mix Wet Ingredients

In another bowl, beat together the milk, eggs, melted butter, and vanilla extract until well combined.

  3. 3

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

  4. 4

    Cook the Pancakes

Preheat a non-stick skillet or griddle over medium heat. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown, about another 2 minutes.

  5. 5

    Keep Warm

Transfer the cooked pancakes to a plate and cover with a clean kitchen towel to keep warm while you cook the remaining pancakes.

Scrambled Eggs

  1. 6

    Whisk Ingredients

In a bowl, whisk together the eggs, milk, salt, and black pepper until fully combined.

  2. 7

    Cook the Eggs

In a non-stick skillet, heat the butter over medium heat until melted. Pour the egg mixture into the skillet and allow to set for a few seconds before gently stirring with a spatula.

  3. 8

    Scramble

Continue to cook, stirring gently, until the eggs are just set but still slightly soft. Remove from heat.

Bacon

  1. 9

    Cook the Bacon

In a skillet over medium heat, cook the bacon strips until crispy, turning occasionally for even cooking. Once cooked, transfer to a paper towel-lined plate to drain excess fat.

Serving

  1. 10

    Plate the Brinner Special

On each plate, serve a stack of pancakes topped with fresh berries, crispy bacon on the side, and scrambled eggs. Drizzle with maple syrup and sprinkle with powdered sugar to taste.
