Pancakes

Prepare the Batter
In a large mixing bowl, combine the all-purpose flour, baking powder, sugar, and salt. Whisk together until well mixed.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

Cook the Pancakes
Preheat a non-stick skillet or griddle over medium heat. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown, about another 2 minutes.

Keep Warm
Transfer the cooked pancakes to a plate and cover with a clean kitchen towel to keep warm while you cook the remaining pancakes.

Cook the Eggs
In a non-stick skillet, heat the butter over medium heat until melted. Pour the egg mixture into the skillet and allow to set for a few seconds before gently stirring with a spatula.

Continue to cook, stirring gently, until the eggs are just set but still slightly soft. Remove from heat.
