Eggs

    Cook the Eggs

    In a non-stick skillet, heat a small amount of oil over medium heat. Crack the eggs into the skillet. Season with salt and black pepper. Cook until the whites are set but the yolks are still runny, about 3-4 minutes. Flip the eggs gently and cook for an additional 1-2 minutes to achieve an over-medium doneness.

    Cook the Bacon

    In the same skillet used for the eggs, add the bacon strips. Cook over medium heat until crispy, about 4-5 minutes per side. Remove and place on a paper towel to drain excess grease.

Jalapeños

    Fry the Jalapeños

    In the same skillet, add olive oil and heat over medium-high heat. Add the jalapeño slices and fry until they are golden and slightly crispy, about 3-4 minutes. Remove and set aside.

Assemble

    Assemble the Brecky

    Toast the sourdough bread slices until golden brown. On one slice, layer the crispy bacon, followed by the fried jalapeños, and then top with the over-medium eggs. Place the Gouda cheese slices on top and let them melt slightly from the heat of the eggs. Top with the second slice of toasted bread. Serve immediately.
