Grilling the Chicken

    Prepare the Chicken

    Preheat your grill to medium-high heat. Rub the chicken breasts with olive oil, garlic powder, salt, and black pepper.

    Place the chicken on the grill and cook for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing.

Cooking the Vegetables

    In a steamer basket over boiling water, steam the broccoli florets for about 5-7 minutes until bright green and tender.

    While the broccoli is steaming, prepare the shredded carrots and chop the scallions. Set aside.

Making the Thai Peanut Sauce

    In a medium bowl, combine the peanut butter, soy sauce, honey, lime juice, sriracha sauce, and water. Whisk until smooth and well combined.

Assembling the Dish

    In a large serving bowl, combine sliced grilled chicken, steamed broccoli, shredded carrots, and chopped scallions.
