Grilling the Chicken

Prepare the Chicken
Preheat your grill to medium-high heat. Rub the chicken breasts with olive oil, garlic powder, salt, and black pepper.

Cooking the Vegetables

Steam the Broccoli
In a steamer basket over boiling water, steam the broccoli florets for about 5-7 minutes until bright green and tender.

Prepare the Carrots and Scallions
While the broccoli is steaming, prepare the shredded carrots and chop the scallions. Set aside.
Making the Thai Peanut Sauce

Mix the Sauce Ingredients
In a medium bowl, combine the peanut butter, soy sauce, honey, lime juice, sriracha sauce, and water. Whisk until smooth and well combined.
Assembling the Dish

Combine All Ingredients
In a large serving bowl, combine sliced grilled chicken, steamed broccoli, shredded carrots, and chopped scallions.

Add the Sauce
Pour the Thai peanut sauce over the chicken and vegetables. Toss until everything is well coated with the sauce.
