Steak Preparation

Marinate and Grill the Steak
Rub the flank steak with olive oil, salt, and black pepper. Let it marinate for 15 minutes. Preheat your grill or skillet over medium-high heat. Grill the steak for about 5-6 minutes on each side for medium rare, or until desired doneness. Remove from heat and let it rest for 5 minutes before slicing into thin strips.

Scramble the Eggs
In a bowl, whisk together the eggs, milk, salt, and black pepper. In a non-stick skillet, melt the butter over medium heat. Pour in the egg mixture and let it sit for a few seconds before gently stirring with a spatula. Continue to cook until the eggs are softly scrambled and slightly runny. Remove from heat.

Sauté the Vegetables
Slice the green bell pepper and onion. In the same skillet used for the eggs, add a little more butter if needed and sauté the onions over medium heat until they are caramelized, about 5-7 minutes. Add the sliced green bell pepper and continue to sauté for an additional 3-4 minutes until they are tender.

Combine and Serve
In a large bowl, layer the scrambled eggs, sautéed vegetables, and sliced steak. Top with slices of provolone cheese. Serve immediately, allowing the cheese to melt slightly from the warmth of the dish.
