Starter Preparation

Mix the Starter
In a clean bowl, combine 120g of all-purpose flour, 120ml of water, and 30g of active sourdough starter. Stir well until all ingredients are incorporated.

Ferment the Starter
Cover the bowl with a cloth or plastic wrap and let it sit at room temperature for 12-24 hours until it becomes bubbly and doubles in size.

Combine Ingredients
In a large mixing bowl, mix 500g of all-purpose flour, 350ml of water, and 10g of salt. Add 150g of active sourdough starter. Stir until a shaggy dough forms.

Let the dough rest for 30 minutes to allow the flour to absorb the water.

Knead the Dough
Knead the dough for about 10-15 minutes until it becomes smooth and elastic.

Bulk Fermentation
Cover the bowl with a damp cloth and let the dough rise at room temperature for 4-6 hours, folding the dough every hour to develop strength.

Shape the Dough
Once the dough has doubled in size, gently turn it out onto a floured surface. Shape it into a round or oval loaf.

Final Proof
Place the shaped dough into a floured proofing basket. Cover it and let it proof for another 2-3 hours at room temperature or overnight in the refrigerator.

Preheat the Oven
Preheat your oven to 230°C (450°F) with a Dutch oven inside for at least 30 minutes.

Bake the Bread
Carefully remove the hot Dutch oven from the oven. Transfer the dough into the pot, cover it, and bake for 30 minutes. Then remove the lid and bake for an additional 15-20 minutes until golden brown.

Remove the bread from the Dutch oven and let it cool on a wire rack for at least 1 hour before slicing.
