Poaching the Eggs

Prepare the Poaching Liquid
In a large saucepan, bring 4 cups of water to a gentle simmer. Add 1 tablespoon of white vinegar to the water, which helps the eggs hold their shape while poaching.

Poach the Eggs
Crack each egg into a small bowl. Once the water is simmering, create a gentle whirlpool in the water with a spoon and carefully slide each egg into the center of the whirlpool. Poach the eggs for about 3-4 minutes for a runny yolk or longer if you prefer them firmer.

Toast the Muffins
While the eggs are poaching, split the English muffins in half and toast them until golden brown. Spread 1 tablespoon of butter on each half after toasting.
Making the Hollandaise Sauce

Melt the Butter
In a small saucepan, melt the unsalted butter over low heat. Once melted, remove it from the heat and let it cool slightly.

Whisk the Egg Yolks
In a medium bowl, whisk together the egg yolks and lemon juice until the mixture is pale and slightly thickened.
