Method

For the Fried Chicken

  1. 1

    Marinate the Chicken

In a large bowl, combine the buttermilk, salt, paprika, garlic powder, onion powder, and black pepper. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

  2. 2

    Prepare the Coating

In a separate bowl, mix the all-purpose flour with salt, paprika, garlic powder, onion powder, and black pepper.

  3. 3

    Heat the Oil

In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  4. 4

    Coat and Fry the Chicken

Remove the chicken from the marinade and let the excess buttermilk drip off. Dredge each piece in the flour mixture, pressing gently to coat. Fry the chicken in batches for 10-15 minutes or until golden brown and cooked through. Use a meat thermometer to check that the internal temperature reaches 165°F (75°C). Transfer cooked chicken to a paper towel-lined plate to drain excess oil.

For the Waffles

  1. 5

    Preheat the Waffle Iron

Preheat your waffle iron according to the manufacturer's instructions.

  2. 6

    Mix Dry Ingredients

In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.

  3. 7

    Mix Wet Ingredients

In another bowl, beat the eggs, then add the milk, melted butter, and vanilla extract. Mix until smooth.

  4. 8

    Combine and Cook Waffles

Pour the wet ingredients into the dry ingredients and stir until just combined. Lightly grease the waffle iron with non-stick spray or butter. Pour an appropriate amount of batter into the preheated waffle iron and cook until golden and crisp, usually 3-5 minutes. Repeat until all batter is used.

To Serve

  1. 9

    Plate and Drizzle

Serve the fried chicken on top of the waffles, and drizzle generously with maple syrup.
