Method

Preparation

  1. 1

    Prep the Ingredients

Dice the green bell pepper and onion. Cook the tater tots according to the package instructions until crispy.

  2. 2

    Cook the Bacon

In a large skillet, cook the bacon over medium heat until crispy. Remove from the skillet and place on paper towels to drain excess fat. Once cooled, chop into bite-sized pieces.

Cooking

  1. 3

    Caramelize the Onions

In the same skillet used for bacon, add olive oil and onions. Cook over medium-low heat, stirring occasionally, until they are caramelized, about 10-15 minutes.

  2. 4

    Scramble the Eggs

In a bowl, whisk the eggs with salt and black pepper. Pour the eggs into the skillet with caramelized onions and add diced green bell pepper. Cook, stirring gently, until eggs are fully scrambled and set.

  3. 5

    Combine the Filling

Add the crispy tater tots and chopped bacon to the scrambled eggs and mix well. Remove from heat and stir in the jalapeño jack cheese until melted.

Assembly

  1. 6

    Assemble the Burritos

Lay a flour tortilla flat on a clean surface. Spoon a generous amount of the egg mixture onto the tortilla, then fold the sides in and roll it up tightly.

  2. 7

    Grill the Burrito

Heat a clean skillet over medium heat. Place the burrito seam-side down on the skillet and grill for 2-3 minutes per side, until golden brown and crispy.
