Prepare the Candied Bacon
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. Place the bacon slices on the baking sheet without overlapping.

Add Brown Sugar
Evenly sprinkle the brown sugar over the bacon slices.

Bake the Bacon
Bake in the preheated oven for 15-20 minutes or until the bacon is crispy and caramelized. Remove from oven and let cool, then chop into smaller pieces.

Prepare the Tomatoes
While the bacon is cooling, wash and slice the tomatoes into rounds. Season with salt and black pepper.

Assemble the Dish
On a serving platter, layer the tomato slices and sprinkle with candied bacon pieces. Add fresh basil leaves on top.

Add Cheeses
Sprinkle the cheddar and pepper jack cheeses over the assembled tomatoes and bacon.

Drizzle the olive oil over the entire dish for added flavor.
