Prepare the Slaw
In a bowl, combine shredded cabbage, grated carrot, and mayonnaise. Mix well and set aside.
Make the Chipotle Mayo
In a small bowl, mix together the mayonnaise and minced chipotle peppers. Set aside.
Prepare the Catfish
In a shallow dish, combine cornmeal, flour, cajun seasoning, salt, and black pepper.
Batter the Catfish
In another bowl, whisk the eggs and buttermilk together. Dip each catfish fillet into the egg mixture and then dredge in the cornmeal mixture until fully coated.
Fry the Catfish
In a large skillet, heat vegetable oil over medium-high heat. Fry the catfish fillets in batches until golden brown and cooked through, about 3-4 minutes per side. Drain on paper towels.
Assemble the Po Boys
Slice the hoagie rolls and spread a generous amount of chipotle mayo on each side. Place a fried catfish fillet in each roll, top with slaw and sliced pickles.
Serve
