Preparation
Brine the Chicken
In a bowl, combine the pickle juice and chicken breasts. Cover and refrigerate for at least 2 hours, or overnight for best flavor.
Prepare the Bama Slaw
In a large bowl, mix together shredded cabbage, carrots, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Toss until everything is well combined and refrigerate until serving.
Make the Chipotle Cheerwine BBQ Sauce
In a saucepan over medium heat, combine Cheerwine, ketchup, chipotle peppers, brown sugar, apple cider vinegar, smoked paprika, and salt. Simmer for about 15 minutes until thickened, stirring occasionally.
Fry the Chicken
In a large bowl, mix together flour, cornstarch, salt, black pepper, garlic powder, and onion powder. Dredge each brined chicken breast in the flour mixture until well coated. Heat vegetable oil in a deep skillet over medium-high heat. Fry the chicken for about 6-8 minutes on each side or until golden brown and cooked through.
Assemble the Sandwich
Spread some of the Chipotle Cheerwine BBQ sauce on the bottom half of each toasted bun, place the fried chicken breast on top, add a generous amount of Bama slaw, and top with the other half of the bun.
