    Cook the Onions

    Slice the onion thinly. In a skillet, melt 1 tablespoon of butter over medium heat. Add the sliced onions and a pinch of salt. Cook until the onions are caramelized, stirring occasionally, about 15-20 minutes. Set aside.

    Form the Patties

    In a bowl, combine the ground beef, salt, and black pepper. Divide the mixture into 4 equal portions and shape them into patties.

    Cook the Patties

    In the same skillet, add another tablespoon of butter and increase the heat to medium-high. Cook the patties for about 4-5 minutes on each side or until they reach your desired doneness. During the last minute of cooking, place two slices of Swiss cheese on each patty to melt.

    Toast the Bread

    While the patties are cooking, spread butter on one side of each slice of Texas toast. In a separate skillet, toast the bread butter-side down until golden brown.

    Assemble the Patty Melt

    On the unbuttered side of two slices of toasted Texas toast, spread a generous amount of Daddy Mac's secret sauce. Place a cheesy patty on top, followed by the caramelized onions and pickles. Top with another slice of toast, buttered side up.

    Grill the Sandwich

    In the skillet, grill the sandwich on medium heat, pressing down slightly with a spatula, until the bread is golden brown and the cheese is melted, about 3-4 minutes on each side.

    Remove from the skillet, cut in half, and serve hot with additional pickles on the side.
