Method

Prepare Tacu Tacu Base

  1. 1

    Sauté Aromatics

In a medium skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent, about 5 minutes.

  2. 2

    Mix Rice and Beans

In a large bowl, combine the cooked white rice, cooked black beans, sautéed onion and garlic, cumin, salt, and pepper. Mix well until all ingredients are combined.

  3. 3

    Form Tacu Tacu

Using your hands, form the mixture into a compact patty or cake shape. You can make one large cake or several smaller ones.

  4. 4

    Cook Tacu Tacu

In the same skillet, add another tablespoon of vegetable oil. Cook the tacu tacu cakes over medium heat until golden brown on both sides, about 4-5 minutes per side. Remove from the skillet and set aside.

Prepare Protein

  1. 5

    Season the Meat

Rub the steak or chicken breast with olive oil, paprika, garlic powder, salt, and black pepper to taste.

  2. 6

    Grill the Meat

Heat a grill or grill pan over medium-high heat. Grill the meat for about 6-7 minutes on each side for steak, or 5-6 minutes per side for chicken, or until fully cooked. Allow it to rest for a few minutes before slicing.

Serve

  1. 7

    Plate the Dish

On a serving plate, place the golden tacu tacu cake, top it with sliced grilled steak or chicken, and garnish with fresh cilantro and lime wedges.
