Method

Preparing the Sea Bass

    Season the Fish

    Pat the sea bass fillets dry with paper towels. Season both sides with salt and black pepper.

    Heat the Oil

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Cook the Fish

    Add the seasoned sea bass fillets to the skillet, skin side down, and cook for about 4-5 minutes until the skin is crispy. Flip the fillets and cook for an additional 3-4 minutes until the fish is cooked through and flakes easily with a fork.

    Remove and Plate

    Once cooked, remove the fillets from the skillet and place them on a serving plate.

Making Aji Amarillo Sauce

    Combine Ingredients

    In a mixing bowl, combine the aji amarillo paste, sour cream, lime juice, minced garlic, and salt.

    Mix Well

    Stir the mixture until smooth and well combined. Adjust seasoning to taste.

    Add Cilantro

    Fold in the chopped cilantro gently.

    Drizzle the aji amarillo sauce over the cooked sea bass fillets before serving.
