Prepare the Marinade
In a large bowl, combine olive oil, white vinegar, minced garlic, paprika, cumin, black pepper, salt, dried oregano, lime juice, and cayenne pepper. Mix well until fully combined.

Marinate the Chicken
Place the whole chicken in a large resealable plastic bag or a deep dish. Pour the marinade over the chicken, ensuring it is fully coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.
Grilling

Preheat the Grill
Preheat your grill to medium-high heat (about 375°F to 400°F or 190°C to 200°C). If using charcoal, set up for indirect grilling.

Grill the Chicken
Remove the chicken from the marinade and let any excess drip off. Place the chicken breast side down on the grill. Cook for approximately 30-35 minutes, then flip and continue cooking for another 30-35 minutes or until the internal temperature reaches 165°F (75°C).

Rest and Serve
Once cooked, remove the chicken from the grill and let it rest for about 10 minutes before carving. Serve with chopped cilantro and lime wedges on the side, if desired.
