Gather all the ingredients: pisco, fresh lemon juice, simple syrup, egg white, Angostura bitters, and ice.
Dry Shake
In a cocktail shaker, combine the pisco, fresh lemon juice, simple syrup, and egg white. Shake vigorously without ice for about 15-20 seconds. This process is known as a dry shake and helps to emulsify the egg white.
Wet Shake
Add ice to the shaker and shake again vigorously for another 15-20 seconds. This will chill the mixture.
Strain
Strain the mixture into a chilled coupe glass or cocktail glass. Use a fine mesh strainer to ensure a smooth pour and to catch any egg white clumps.
Garnish
Add 2 dashes of Angostura bitters on top of the foam created by the egg white. Optionally, you can create a design with a toothpick.
Serve
Serve immediately and enjoy your classic Pisco Sour!
