Doughnut Preparation

Prepare the Sweet Potatoes
Boil the sweet potatoes in a pot of water until they are tender, about 20 minutes. Drain and let cool, then peel and mash until smooth.

Mix the Dough
In a large mixing bowl, combine the mashed sweet potatoes, flour, sugar, baking powder, salt, cinnamon, nutmeg, and the yeast dissolved in warm water. Mix well until a dough forms.

Add the Egg
Add the egg to the dough mixture and knead until it becomes elastic and smooth, about 5-7 minutes.

Let the Dough Rise
Cover the bowl with a clean cloth and let the dough rise in a warm place for 1 hour, or until it has doubled in size.

Shape the Doughnuts
Once risen, punch down the dough and roll into small balls, then use your finger to create a hole in the center of each ball. Let them rest for another 30 minutes.
Frying the Doughnuts

Heat the Oil
In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Doughnuts
Carefully drop the shaped doughnuts into the hot oil in batches. Fry for about 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.

Make the Syrup
In a small saucepan, combine honey, water, cloves, and lemon juice. Bring to a boil, then reduce heat and simmer for 10 minutes. Remove the cloves.

Serve the Picarones
Drizzle the warm honey syrup over the fried picarones and enjoy!
