    Prepare the Beef

    In a large bowl, season the sliced sirloin beef with salt, black pepper, minced garlic, soy sauce, and vinegar. Let it marinate for at least 15 minutes.

    Cook the Fries

    While the beef is marinating, prepare the French fries according to package instructions, either baking or frying them until golden and crispy.

    Stir-Fry the Beef

    In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Once hot, add the marinated beef and stir-fry until browned and cooked through, about 3-5 minutes. Remove the beef from the skillet and set aside.

    Saute the Vegetables

    In the same skillet, add another tablespoon of oil if necessary. Add the sliced red onion and sauté for about 2 minutes until they start to soften. Then, add the diced tomatoes and cook for an additional 2 minutes until the tomatoes soften.

    Combine and Serve

    Return the cooked beef to the skillet with the vegetables. Stir everything together for about 1-2 minutes, allowing the flavors to meld. Adjust the seasoning with more salt and pepper if desired. Serve hot over a bed of French fries and garnish with chopped cilantro.
