Preparing the Fish

    Clean the Fish

    Rinse the whole fish under cold water, removing any scales and innards, if necessary. Pat dry with paper towels.

    Marinate the Fish

    In a bowl, mix olive oil, lemon juice, minced garlic, salt, black pepper, and fresh herbs. Rub this marinade all over the fish, inside and out. Let it marinate for at least 30 minutes.

Preparing the Vegetables

    Prepare the Vegetables

    In a large bowl, combine sliced zucchini, bell peppers, and red onion. Drizzle with olive oil, and season with salt and black pepper to taste. Toss to coat the vegetables evenly.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat (about 375°F to 400°F).

    Grill the Vegetables

    Place the prepared vegetables on a grill basket or directly on the grill grates. Grill for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks.

    Grill the Fish

    Carefully place the marinated fish on the grill. Grill for 6-8 minutes on each side or until the fish flakes easily with a fork and has nice grill marks.

Serving

    Plate and Serve

    Once the fish and vegetables are done, remove them from the grill. Place the grilled fish on a serving platter alongside the grilled vegetables. Garnish with additional fresh herbs if desired. Serve immediately.
