Mussels Preparation

    Clean the Mussels

    Rinse the fresh mussels under cold running water to remove any sand or debris. Discard any mussels that are open and do not close when tapped.

    Steam the Mussels

    In a large pot, add 2 cups of water and bring to a boil. Place the cleaned mussels in a steamer basket or directly in the pot, cover, and steam for about 5-7 minutes, or until the mussels open up. Discard any mussels that remain closed.

Chalaca Salsa Preparation

    Prepare the Salsa

    In a mixing bowl, combine the finely chopped red onion, tomato, cilantro, lime juice, and chili pepper. Mix well to combine all the ingredients.

    Season the Salsa

    Add salt and black pepper to taste. Mix again and let the salsa sit for about 10 minutes to allow the flavors to meld.

Assembly

    Top the Mussels

    Once the mussels are cooked and opened, transfer them to a serving platter. Spoon the Chalaca salsa generously over each mussel.

    Serve

    Serve the Choritos a la Chalaca warm, with additional lime wedges on the side if desired.
