Marinating the Chicken

In a large bowl, combine garlic, cumin, paprika, lime juice, salt, and black pepper. Mix well.

Marinate Chicken
Add the chicken thighs to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 2 hours, or overnight for best flavor.
Making Aji Verde Sauce

Blend Ingredients
In a blender, combine cilantro, jalapeño, garlic, lime juice, mayonnaise, and salt. Blend until smooth. Adjust seasoning to taste.

Chill Sauce
Transfer the aji verde sauce to a bowl, cover, and refrigerate until ready to serve.
Frying the Chicken

Prepare for Frying
In a large mixing bowl, combine flour and cornstarch. Mix well.

Coat Chicken
Remove marinated chicken from the refrigerator. Dredge each piece in the flour-cornstarch mixture, shaking off any excess.

Fry Chicken
Carefully place the coated chicken pieces in the hot oil. Fry in batches, without overcrowding, for about 7-10 minutes or until golden brown and cooked through.

Remove the fried chicken and drain on paper towels. Serve hot with aji verde sauce on the side.
