    Prepare the Ingredients

    Chop the onion, mince the garlic, dice the tomato, and chop the red bell pepper and cilantro. Rinse the Arborio rice under cold water until the water runs clear.

    Marinate the Seafood

    In a bowl, combine the mixed seafood with lemon juice, salt, black pepper, and paprika. Let it marinate for about 15 minutes.

Cooking

    Sauté Vegetables

    In a large pan or paella pan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent. Add minced garlic and sauté for another minute until fragrant.

    Cook the Rice

    Add the Arborio rice to the pan and stir for 2-3 minutes until the rice is lightly toasted. Pour in the fish stock and bring to a boil. Reduce heat to low and let simmer for 10 minutes.

    Add Seafood and Vegetables

    Stir in the marinated seafood, diced tomato, red bell pepper, and green peas. Add saffron if using. Season with salt and black pepper to taste. Cover the pan and cook for an additional 10-15 minutes, or until the seafood is cooked and the rice is tender.

    Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice gently with a fork and stir in chopped cilantro before serving.
