    Prepare the Leek Cream

    In a small saucepan over medium heat, add the finely chopped leek and cream. Cook until the leeks are softened and the cream has thickened slightly, about 5-7 minutes. Remove from heat and set aside.

    Assemble the Flatbread

    Preheat the oven to 400°F (200°C). Place the flatbreads on a baking sheet. Spread a layer of the leek cream on each flatbread.

    Add the Toppings

    Evenly distribute the fresh spinach, sliced figs, and prosciutto over the flatbreads. Top with crumbled goat cheese and sliced piquillo peppers.

    Bake

    Bake in the preheated oven for about 10-12 minutes, or until the edges of the flatbread are crispy and the cheese is slightly melted.

    Drizzle with Balsamic

    Remove from the oven and drizzle with balsamic glaze. Slice and serve warm.
