Prepare the Serrano Cream
In a small bowl, mix the sour cream with finely chopped Serrano pepper. Season with salt and black pepper to taste. Set aside.

Poach the Eggs
Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide them into the water. Poach for about 3-4 minutes, until the whites are set but the yolks are still runny. Remove with a slotted spoon and set on a paper towel to drain.

Assemble the Sandwich
Toast the rustic bread slices until golden brown. On each slice, layer the brewer’s crafted ham followed by slices of white cheddar cheese.

Melt the Cheese
Place the assembled sandwiches under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.

Add the Toppings
Remove the sandwiches from the oven. Spread the serrano cream on top, then place a poached egg on each sandwich.

Finish with Charred Serrano
If desired, char the remaining Serrano pepper over an open flame or in a skillet until blistered. Slice and place on top of each sandwich as a garnish.

Season with additional salt and pepper if desired, and serve immediately.
