Method

Meat Preparation

  1. 1

    Marinate the Pork

In a large bowl, combine pineapple juice, white vinegar, minced garlic, oregano, cumin, chili powder, salt, black pepper, and ancho chili powder. Mix well.

  2. 2

    Add Pork

Cut the pork shoulder into manageable chunks and add it to the marinade. Ensure the pork is completely coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

  1. 3

    Cook the Pork

Preheat your grill or a skillet over medium-high heat. Remove the pork from the marinade, allowing excess to drip off.

  2. 4

    Grilling

Grill the pork for about 6-8 minutes per side, or until the internal temperature reaches 145°F (63°C). Remove from heat and let it rest for 10 minutes.

  3. 5

    Chop the Pork

Once rested, chop the pork into small pieces.

Taco Assembly

  1. 6

    Warm the Tortillas

In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until they are pliable.

  2. 7

    Assemble the Tacos

Place a generous portion of chopped pork on each tortilla. Top with diced pineapple, diced onion, and chopped cilantro.

  3. 8

    Serve

Serve the tacos with lime wedges and sliced radishes on the side.
