    Prepare the Ingredients

    Chop the onion, red bell pepper, and tomato. Mince the garlic. Rinse the mussels and shrimp, and pat dry the chicken thighs.

    Marinate the Chicken

    Season the chicken thighs with salt, black pepper, and paprika. Let them marinate for 15 minutes.

Cooking

    Sauté the Vegetables

    In a large paella pan or skillet, heat the olive oil over medium heat. Add the chopped onion, red bell pepper, and minced garlic. Sauté until softened, about 5 minutes.

    Cook the Chicken

    Add the marinated chicken thighs to the pan and cook until browned on all sides, about 8-10 minutes.

    Add Rice and Liquids

    Stir in the bomba rice, coating it well with the oil and juices. Pour in the chicken broth and white wine. Add saffron threads, and bring the mixture to a boil.

    Simmer

    Reduce the heat to low and let the mixture simmer for about 15 minutes without stirring.

    Add Seafood and Peas

    After 15 minutes, add the shrimp, mussels, and green peas on top of the rice. Cover the pan with a lid or aluminum foil and cook for an additional 10 minutes, or until the seafood is cooked and the rice has absorbed the liquid.

    Rest and Serve

    Remove the pan from heat and let it rest for 5 minutes. Fluff the paella with a fork and serve warm.
