Prepare the Potatoes
Peel the Russet potatoes and cut them into 1-inch cubes.

Soak the Potatoes
Place the potato cubes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes them crispier.

Preheat the Oven
Preheat your oven to 425°F (220°C).

Drain and Dry
Drain the soaked potatoes and pat them dry with a kitchen towel to remove excess moisture.

Season and Bake
In a large bowl, toss the potato cubes with olive oil, salt, smoked paprika, and black pepper. Spread them out in a single layer on a baking sheet and bake for 25-30 minutes, flipping halfway through, until golden and crispy.
For the Spicy Aioli

Combine Ingredients
In a medium bowl, combine mayonnaise, minced garlic cloves, lemon juice, Sriracha sauce, and salt.

Mix Well
Whisk the ingredients together until smooth and well-combined. Adjust the spiciness by adding more Sriracha if desired.

Chill
Refrigerate the aioli for at least 15 minutes to allow the flavors to meld together.
