Croquettes Preparation

Sauté the Onion
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5-7 minutes.

Make the Roux
Add 1 cup of all-purpose flour to the skillet, stirring constantly for about 1 minute until well combined.

Add Milk
Gradually pour in 2 cups of milk while stirring to avoid lumps. Cook for about 5 minutes until the mixture thickens.

Add Ham and Seasoning
Stir in 1 cup of finely chopped cooked ham, 1 teaspoon of nutmeg, 1 teaspoon of salt, and 1 teaspoon of black pepper. Mix well and cook for another 2 minutes.

Cool the Mixture
Transfer the mixture to a bowl and cover it with plastic wrap. Allow it to cool completely in the refrigerator for at least 2 hours.

Shape the Croquettes
Once cooled, scoop out portions of the mixture and shape them into small cylinders or balls.

Fry the Croquettes
In a deep skillet, heat vegetable oil over medium-high heat. Fry the croquettes in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.
Aioli Preparation

Combine Ingredients
In a mixing bowl, combine 2 minced garlic cloves, 1 egg yolk, and 1 tablespoon of lemon juice.

Emulsify
Slowly drizzle in 1 cup of olive oil while whisking continuously until the mixture is thick and creamy.

Season
Add salt to taste and mix well. Adjust the seasoning as needed.
