Prepare the Filling

    Cook the Onion

    In a medium skillet, melt the butter over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes.

    Add the Ham

    Finely chop the prosciutto or ham and add it to the skillet. Cook for another 2-3 minutes until heated through.

    Make the Roux

    Sprinkle the flour over the ham and onion mixture. Stir well to combine and cook for about 2 minutes to remove the raw flour taste.

    Add Milk and Seasoning

    Gradually pour in the milk while continuously stirring to avoid lumps. Cook the mixture until it thickens, about 5-7 minutes. Season with nutmeg, salt, and black pepper.

    Cool the Mixture

    Transfer the mixture to a bowl, cover it with plastic wrap, and let it cool in the refrigerator for at least 1 hour.

Form the Croquettes

    Prepare Breading Stations

    Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs.

    Shape the Croquettes

    Once the filling has cooled, take a small amount (about 1 tablespoon) and shape it into a small cylinder or oval. Repeat with the remaining filling.

    Bread the Croquettes

    Dredge each croquette in flour, then dip it into the beaten eggs, and finally coat it with breadcrumbs, ensuring they are well-covered.

Fry the Croquettes

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

    Fry the Croquettes

    Carefully place the breaded croquettes into the hot oil, frying them in batches to avoid overcrowding. Fry until golden brown, about 3-4 minutes per side.

    Drain and Serve

    Remove the croquettes with a slotted spoon and drain them on paper towels. Serve them hot with your favorite dipping sauce.
