Prepare the Dough

    Combine Ingredients

    In a medium saucepan, combine water, 2 tablespoons of sugar, salt, and butter. Bring to a boil over medium heat.

    Add Flour

    Once the mixture is boiling, remove it from heat and quickly stir in 1 cup of all-purpose flour until the mixture forms a ball.

    Incorporate Eggs

    Allow the dough to cool for a few minutes. Then, add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

Heat the Oil

    Prepare the Oil

    In a large heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Fry the Churros

    Pipe the Dough

    Transfer the dough to a piping bag fitted with a large star tip. Carefully pipe strips of dough (about 4-6 inches long) into the hot oil.

    Fry Until Golden

    Fry the churros in batches, without crowding the pot, for about 2-3 minutes on each side or until they are golden brown.

    Remove and Drain

    Use tongs to remove the churros from the oil and place them on a paper towel-lined plate to drain excess oil.

Coat the Churros

    Mix Sugar and Cinnamon

    In a shallow dish, mix together 1 cup of granulated sugar and 2 teaspoons of ground cinnamon.

    Coat the Churros

    While the churros are still warm, roll them in the sugar-cinnamon mixture until fully coated.
