    Prepare the Chorizo

    Slice the chorizo sausage into thick rounds, about 1 inch in thickness. This will help the sausage cook evenly and absorb the flavors of the wine.

    Chop Aromatics

    Dice the onion and mince the garlic cloves. Set aside for later use.

Cooking

    Sauté Aromatics

    In a large skillet or pan, heat a tablespoon of oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened. Add the minced garlic and continue to sauté for another minute until fragrant.

    Cook Chorizo

    Add the sliced chorizo to the skillet with the sautéed onions and garlic. Cook for about 5 minutes, stirring occasionally, until the chorizo is browned and has released some of its oils.

    Add Wine and Spices

    Pour in the red wine and add the bay leaves and black peppercorns. Stir everything together to combine well.

    Bring the mixture to a gentle simmer. Reduce the heat to low and let it cook uncovered for about 15-20 minutes. This will allow the flavors to meld and the sauce to thicken slightly.

    Once cooked, remove the bay leaves. Sprinkle chopped fresh parsley over the dish before serving. This adds a fresh flavor and a pop of color.
