Cooking Instructions

  1. 1

    Prepare the Ingredients

Begin by slicing the chorizo sausage into bite-sized pieces. Mince the garlic cloves, chop the onion, and dice the red bell pepper. Set aside the fresh parsley for garnish.

  2. 2

    Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes translucent. Then add the minced garlic and diced red bell pepper, cooking for an additional 3-4 minutes until softened.

  3. 3

    Cook the Chorizo

Add the sliced chorizo sausage to the skillet with the sautéed vegetables. Cook for about 5-7 minutes, stirring occasionally, until the chorizo is browned and slightly crispy.

  4. 4

    Add Red Wine and Seasoning

Pour the red wine into the skillet and stir to combine. Add paprika, salt, and black pepper to taste. Let it simmer for about 10 minutes, allowing the flavors to meld and the sauce to reduce slightly.

  5. 5

    Garnish and Serve

Once cooked, remove the skillet from heat. Garnish with fresh parsley before serving. Enjoy your chorizo with crusty bread or as a topping for rice or pasta.
