For the Calamari

    Prepare the Calamari

    Rinse the calamari rings under cold water and pat them dry with a paper towel. Set aside.

    Mix Dry Ingredients

    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

    Prepare Breading Station

    In a separate bowl, beat the eggs. In another bowl, place the breadcrumbs. You will have three bowls: one with dry mix, one with eggs, and one with breadcrumbs.

    Coat the Calamari

    Take a calamari ring, dip it in the dry mix, shaking off excess, then dip it in the beaten egg, and finally coat it in breadcrumbs. Repeat with all calamari rings.

    Fry the Calamari

    In a large pot or deep skillet, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). Fry the coated calamari in batches for about 2-3 minutes until golden brown and crispy. Remove and drain on paper towels.

    Prepare the Aioli

    In a small bowl, combine the mayonnaise, minced garlic, and lemon juice. Stir well until smooth.

    Add salt and black pepper to taste. Mix again and adjust seasoning if needed.
