Prepare the Broth

    Cook the Pork Bones

    In a large pot, add the pork bones and cover with water. Bring to a boil over high heat. Once boiling, reduce to a simmer and cook for about 3-4 hours, skimming off any foam or impurities that rise to the surface.

    Add Flavorings

    After the broth has simmered, add soy sauce, mirin, ginger, garlic, and scallions. Continue to simmer for another hour, allowing the flavors to meld. Adjust salt to taste.

    Strain the Broth

    Once the broth is flavorful and rich, strain it through a fine mesh sieve to remove the solids. Set the broth aside and keep warm.

Prepare the Noodles and Toppings

    Cook the Ramen Noodles

    Bring a separate pot of water to a boil. Add the ramen noodles and cook according to package instructions, usually about 3-5 minutes. Drain and set aside.

    Prepare Soft-Boiled Eggs

    Bring a small pot of water to a gentle boil. Carefully add the eggs and cook for 6-7 minutes for a soft-boiled texture. Remove the eggs, place them in an ice bath to stop the cooking, then peel and slice in half.

    Assemble the Ramen Bowl

    In a serving bowl, place a portion of the cooked ramen noodles, ladle the hot broth over the noodles, and top with sliced pork belly, soft-boiled egg halves, nori sheets, and bean sprouts. Drizzle with chili oil and sprinkle sesame seeds on top.
