Method
Preparing the Chicken
Season the Chicken
Season the chicken breasts with salt and black pepper on both sides.
Prepare Breading Stations
Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
Bread the Chicken
Dredge each chicken breast in flour, dip into the beaten eggs, and coat with panko breadcrumbs.
Fry the Chicken
In a large skillet, heat vegetable oil over medium heat. Fry the breaded chicken for about 5-7 minutes on each side or until golden brown and cooked through. Drain on paper towels.
Making the Curry Sauce
Add Liquid Ingredients
Stir in the curry powder, then add the chicken broth and coconut milk. Bring to a simmer.
Season the Sauce
Add soy sauce and sugar, and let the sauce simmer for about 15-20 minutes until the vegetables are tender and the sauce has thickened.
Cooking the Rice
Rinse the Rice
Rinse the jasmine rice under cold water until the water runs clear.
Preparing the Salad
Assemble the Salad
In a bowl, toss together the mixed salad greens, halved cherry tomatoes, and sliced cucumber.
Dress the Salad
In a small bowl, whisk together olive oil, balsamic vinegar, and salt. Drizzle over the salad and toss to coat.
Serving
Plate the Dish
On a plate, serve the crispy chicken fillet alongside a generous portion of curry sauce, fluffy rice, and a side of salad.
