    In a microwave-safe bowl, mix together glutinous rice flour, sugar, and water until smooth.

    If using, add food coloring to the mixture and stir until evenly distributed.

    Microwave the Mixture

    Cover the bowl with plastic wrap, leaving a small vent. Microwave on high for 1 minute. Stir the mixture, then microwave for another minute. Repeat this process until the mixture becomes thick and translucent (about 3-4 minutes total).

    Dust with Cornstarch

    On a clean surface, sprinkle cornstarch generously. Once the mochi dough is cool enough to handle, transfer it onto the cornstarch-dusted surface.

    Shape the Dough

    Dust your hands with cornstarch and flatten the mochi dough into a rectangle about 1/4 inch thick. Cut into squares or circles, depending on your desired shape.

Assembly

    Scoop the ice cream into small balls, about 1-2 tablespoons each. Place them on a tray and freeze for about 30 minutes to firm up.
