Mix Ingredients
In a mixing bowl, combine the sweet rice flour, sugar, and water. If you're using food coloring, add it at this stage. Stir until the mixture is smooth and well combined.
Steam the Mixture
Transfer the mixture to a heatproof dish or pan that fits inside a steamer. Cover the dish with a lid or aluminum foil to prevent water from dripping into the mochi mixture. Steam on high heat for about 20 minutes or until the mixture becomes translucent and sticky.
Cool and Dust
Once steamed, remove the dish from the steamer and let the mochi cool slightly. Dust a clean surface with cornstarch to prevent sticking. Carefully transfer the mochi onto the dusted surface.
Shape the Mochi
Using your hands or a rolling pin, flatten the mochi to about 1/2 inch thickness. Dust with more cornstarch as needed to prevent sticking. Cut the mochi into squares or desired shapes using a knife or cookie cutter.
Serve or Store
Enjoy the mochi fresh, or store it in an airtight container for a few days. If you want to freeze the mochi, place the pieces in a single layer on a baking sheet, freeze until solid, then transfer to a freezer-safe bag.
