Crust Preparation

    Make the Crust

    In a medium bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the crumbs are evenly coated and resemble wet sand.

    Press into Pan

    Press the crumb mixture firmly into the bottom of a 9-inch pie or tart pan. Ensure it is evenly spread and compact.

    Bake the Crust

    Preheat the oven to 350°F (175°C). Bake the crust for 10 minutes, then remove from the oven and let it cool completely.

Filling Preparation

    Prepare the Filling

    In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar, mixing until combined.

    Add Flavorings

    Add the vanilla extract and lemon juice to the cream cheese mixture and mix until smooth.

    Whip the Cream

    In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture until fully incorporated.

    Pour the cream cheese filling into the cooled crust, spreading it evenly. Refrigerate for at least 4 hours or until set.

Topping Preparation

    Just before serving, wash and prepare the fresh berries. Slice any larger berries, such as strawberries, into smaller pieces.

    Top the chilled cheesecake with a generous amount of fresh berries and sprinkle mint leaves on top. Drizzle with honey or maple syrup for added sweetness.
