Fondue Preparation

Prepare the Cheese Mixture
Grate the Gruyère and Emmental cheese and mix them in a bowl with cornstarch to coat the cheese.

Prepare the Pot
Rub the inside of a fondue pot with the garlic clove, then discard the clove.

Heat the Wine
Pour the white wine into the fondue pot and heat it over medium heat until it is warm but not boiling.

Add the Cheese
Gradually add the cheese mixture to the warm wine, stirring constantly until melted and smooth.

Add Lemon Juice
Stir in the lemon juice for flavor and to help stabilize the cheese.

Serve with Dippers
Serve the fondue warm with cubed sourdough bread, sliced Gala apple, sautéed cremini mushrooms, and sliced Two Rivers pork sausage for dipping.
