Prepare the Bones
Preheat your oven to 400°F (200°C). Place the beef bones on a baking sheet and roast in the oven for about 30 minutes until browned.

Combine Ingredients
In a large stockpot, combine the roasted bones, water, apple cider vinegar, carrots, celery, onion, garlic, bay leaves, thyme, salt, black peppercorns, and parsley stems.

Cook the Broth
Bring the mixture to a boil over high heat, then reduce the heat to low and let it simmer for at least 12 hours (up to 24 hours for more flavor). Skim off any foam or impurities that rise to the top.

Strain the Broth
After simmering, remove the pot from heat. Carefully strain the broth through a fine-mesh sieve or cheesecloth into another pot or large bowl, discarding the solids.

Cool and Store
Let the broth cool to room temperature, then refrigerate or freeze in containers for future use.
